Put the pork butt in the smoker at about 10:45 last night at 240f.
About 6:45 this morning it was up to 165f.
Pulled it out, wrapped in foil, put it back in, and bumped temp to 275f.
About 9:30 this morning it reached 201.7f and stayed there.
Pulled it at 10:00, let it rest for a half hour, then pulled it apart.
