Do You Have a Favorite Fall Food that You Cook on Your Pit?
« on: October 15, 2017, 02:22:57 PM »

It has finally started to cool down a bit and feel a little fall like.  So I made one of my favorite fall foods -- roasted butternut squash soup. Cooked the squash on the Memphis Pro at a low heat.  Cooled and scooped out the pulp. Cooked some onions and a little fresh garlic, added home made chicken stock and the pulp from the squash, pureed and then lots of heavy whipping cream (this version is not for dieters!).  Soup has just a hint of a smokey taste and I think it goes with fall.

Do you have anything you like to cook in the fall on your pit?

That does look good. I've only made butter nut squash one time in the oven.
I really thought it would be good, but I really didn't like it at all.

I'm wondering now if I did something wrong.
I guess I need to try again, maybe the heavy whipping cream is the secret, I don't remember if I used milk or heavy cream.

That looks good Kristen - the ingredients list sounds like a winner. I do not like squash, and my wife always tries to get me to eat it - maybe this will do it for me.

I'm thinking of getting a ceramic lined Dutch oven and doing a slow cook of chili on the grill just to impart a bit of wood smoke flavor and compliment the chili with corn bread.  I know this could be done stove top or in the oven but there may be a little more mystique with doing it over pellets; probably just a bit nostalgia and wanting to be sitting next to a open camp fire.  Will update and welcome any comments from those who have already done this.
