Title: ChefsChoice Model 15XV
Post by: Bentley on February 02, 2022, 03:52:17 PM
I thought I would get this going.  Probably will not get to the heart of it till we get back from California, but if folks had questions they could ask!

MSRP is $159 on Amazon.  It is supposed to take European & American knives that are 20° and put a 15° edge on them.  Why it would do that and why it would be better then a 20° blade I will have to get into when I get back.

You can get a blade nice in sharp in about 2 minutes.  I got tired or the Nirey KE-280 Knife Sharpener belts wearing out, so it is out!

I have the same one.  Used it once so far, made a big difference.
The narrower angle makes it thinner and cuts easier.
It takes some tome to get them to the 15 degree angle, but once there, should sharpen rather quickly.
