Ingredients:
8 ea Boneless Chicken Thighs
1/2 lb Thin Sliced ham, cut in to thin strips
1/2 lb Gruyere Cheese, shredded
16 ea Dill Pickle slices
16 ea Bacon slices.
S & P to taste
You can put pretty much whatever you like inside the chicken.
Put in the Memphis at 300F. When IT reached 160, I turned it up to 385 for 10 minutes (give or take).
Raising the temp was to crisp up the bacon.
Pictures pretty well show the process. If you have any questions, ask away.
Next time, I think I will cut the bacon so the ends just touch (on top) when wrapped around, rather than having the bacon so thick where they overlap.
Had some Bavarian Potato Salad and veggies with it for lunch.

Haha, I asked the same question when I saw them in a pic on the Pizza Making forum.
They use them in meat departments, the two prongs go into the meat, and a card with name and price goes in the top.
Got them on Amazon. You get a lot in a box, so I gave a 1/3 to each of my sons.

Clean and reuse. Easy to clean. Not any different than cleaning the thermometer probes.

Did you make them in the glass baking dish? And did you mean that when it reached 160 IT that you turned Memphis up to 380* (you wrote 180*)?

No, used a spatula to take them out and put on grill.
