Nearly Famous Mac n Cheese

I got this recipe from Malcolm Reeds How to BBQ Right app. I do put my own twist on it.
1/2 stick real butter
3 tbsp flour
2 cups shredded cheddar
2cups Monterey Jack
2 cups heavy cream/or milk
1 box pasta elbow noodles
3 tsp hot sauce/I used whatever is on hand
3 tsp of Honey Hog
1 cup real Mayo
1 cup sour cream
1 cup bread crumbs
1/2 cup bacon bits
Make the roux. Then add the heavy cream and cheddar. Stir together at least 3-5 minutes, stir in noodles. I boil my noodles first. Add seasoning and hot sauce. Add Mayo and sour cream. Once mixed together add the other 2 cups of Monterey Jack on top. Toast bread crumbs and bacon bits together. Spread evenly over top. Then on the grill for approx 30 minutes at 300.
I do this in a large cast iron skillet.

Last couple times I’ve made it I’ve only used half of the cheese. I didn’t put the cheese on top, just bread crumbs and bacon bits

That looks really good. I may try it out, using small cubes of sandwich pepperoni.

I made the GF lunch for the next 2 days. This is similar to yours.

Looking at the recipe, I wouldn't think there to be enough liquid to cook the pasta.

I use bacon bits from Costco. Says it’s real bacon on the bag. I’ll bet if you used milk instead of heavy cream it would probably Cooke the noodles just fine. Or add them into the cheesy flour butter, and cream mixture ca stir u til soft…I think I also read that you can just boil them half way and add…
