4 Hour Spares on 1070

Nice day yesterday so I did spares.  Used Fast Eddy recipe with brown sugar over night, then Meat Church Honey and Voodoo rubs. On at noon at 275* and done at 4 PM.  Spritzed at 3 hrs with ACV/H2O, painted with Blue's Hog at 3:45PM and out at 4PM.  Had good smoke almost all the time. Ribs were 202* at finish, and were super.  The bark noticeable with some bite from the sauce. They were not too dry.

I had same idea.  Got a couple slabs of babybacks thawing now. Should be ready to go tomorrow or Friday.

Looks like 275° is your new method.  They look great.

Blue's Hog is an interesting thick fruit based sauce. I had to thin it down with ACV to use it as paint at the end. It was good. Next time might go for SP again. Rib surfaces were crusty but meat under was soft and moist. Yup 275* is good. Esp. time wise. By the way, they were also moderately smokey.

This is the only way I do my ribs, but at 250 instead of 275.  My wife loves the glaze.  Every time I do pork I have to do the glaze.

That's why they call it "pig candy". Ribs are about the only thing we do weekly without getting tired of it.
