It's not pellet-related but there are a number of sous vide fans here. Anova says it's sous vide PLUS.
I'm getting close to buying one.
I'd like more information on combination-ovens if anyone can direct me.

Thanks for posting this. I didn't realize anova was doing this. I've been contemplating a bread/brick oven of some sort, and steam is definitely a component to consider. I think the interior dimensions are a no go on this model for me but it's definitely a cool idea.

I saw it in an email a few months ago when they announced it and was turned away by the price and the fact I probably don't need another piece of equipment. I thought I posted about it here back then. Would be interested in your review if you buy one.

there are several put there the first I remember from a couple years ago was a Cuisinart CSO-300 smaller I think than the Anova, but I haven't looked into either much. There is another one Tovala or something like that also. I believe both are less then the $500 Anova (that was what it was when I looked at them).
If my Breville smart oven ever goes I would think about one from someone. The Breville makes some fan noise when it starts so it may not be long on life, but has been used hard for life it has lived.

I have not read all of it as I don't have an interest in it, but I did see a couple posts about the potential of the steam ruining surrounding cabinets.

I'm fascinated by cooking from an App. I think that's the kitchen range of the future, like the Heston Cue (https://www.hestancue.com). (A link waaaay far removed from pellet cooking.)
