Title: Meatloaf in the Pit
Post by: pmillen on July 16, 2021, 03:43:16 PM
This meatloaf is a mix of beef and (pork) Italian sausage.  I didn't think it fit in either category, so I posted it here, in <Everything Else>.

Makes two 2¼ lb. loaves

Ingredients

2½ lbs. ground beef-93% lean (lean ‘cause of sausage)
2 lbs. mild bulk Italian Sausage
      1 large onion (chopped)
      2 Tbsp. garlic powder
2 Tbsp. Dizzy Pig Raising the Steaks Canadian-style BBQ Rub
      4 eggs
      4 oz. catsup
4 oz. KC Masterpiece BBQ Sauce
      1 cup Italian bread crumbs

Directions

I had been eyeing up recipes for meatloaf this past week and planned to make one soon.

It's a favorite, but I often test changes.  I have another, quite different, that I will post the next time I make it.  There's a possibility that it'll replace this as the favorite.

Any favorite meat loaf recipe will be better when cooked in the pit.

I will have to try the catsup and or bbq sauce again. I have made it in the past and never cared for the finished product, it seems like yours is using much less than what I made.

Could be that it is not what I was used to growing up. When Woman made it, it was just ground beef a couple of eggs, onions, salt, pepper, some milk and it could have either oatmeal, saltines, or bread crumbs for the other item. I am sure she did it at times but I don't recall it ever being hit with catsup on top of it. My go to for lazy meatloaf if mix of ground beef and pork, eggs, course chopped onions (I like the larger pieces in mine) a box of stove top stuffing, milk and steak seasoning. I have put cheese in it, the GF loves cheese but not in meatloaf.

Have not done one in a while, maybe this coming week.

I will either be making meatloaf or salisbury steaks tomorrow.  I just got the meat, bread crumbs, and bell peppers.

I had some onions and the other ingredients and bought some more onions, so yes.  I may even through in a jar of spicy mushrooms.

I also like crushed Ritz crackers instead of breadcrumbs.

We use Oatmeal. Ritz Crackers sounds like a good option, then you have the leftover crackers to eat.   ;D
