  • Some Pork short ribs.  On the left is just S&P for rub, the right has a homemade rub.
    Will have to see if I prefer one over the other.
    And some Wild Pacific Cod.  I don't know if "Wild" is just a marketing thing as it doesn't actually say "Wild Caught"

  • the short ribs are just pork chops cut differently?

    They look good, what temp did you cook them to?

    I have probably had Cod and not remembered it.What kind of flavor profile does it have?

    I was wrong, they are Country Style Ribs. Guess I was thinking of the beef short ribs I had looked at.
    Here is deffnition:
    Country-style ribs are unique in appearance, as they’re the only types of ribs that are boneless.
    Cut from the chuck eye roll, these are often referred to as pork shoulder steaks.
    While you might find a “bone” in them on occasion, this is not a rib bone but the scapula or a bit of the shoulder blade.



    They look good, what temp did you cook them to?
    I did 225 for an hour or so, and then 275 until I pulled them.   About 170 IT.   Fish was pulled at 153 IT.


    I have probably had Cod and not remembered it.What kind of flavor profile does it have?
    Not quite sure how to describe it,  Rather mild is about the best I can come up with.

  • I was thinking they were country style ribs.

    Those were cut from the lion, that is why I asked about pork chops.

    we have CS ribs around here and they used to always be cut from the butt, either bone in or boneless, the last few years I have been seeing places cut them from the bone in loin. Those are lean and I usually cook them differently than the butt ones as they have more fat.I guess butts got more expensive than loins and that is why they cut them from there now.

    I don't know what goes into taming fish. I do think if someone takes the time to teach a fish how do a few little tricks, it would be a shame to eat them! I also have heard that fish heads are not much fun. https://www.youtube.com/watch?v=JKDtUzRIG6I

    That being said, after getting some blood tests back, I think there will be a lot more baked cod in my near future.

    I sing that all the time to the GF then she is humming it for hours and yelling at me. I sung some of the Scrotum song to her one morning and she went to work humming and singing it, the people thought she was crazy.

    Beatles Yellow Submarine is another one I do that to her with.

    She has a person by the name of Margret in her office and she gets on her nerves at times, so the other week she was telling me about what Margret did today, so I pulled up youtube and Ray Stevens and we listened to a few of his songs then she was that's enough.

  • I never thought that Dr. D would ever come up in discussion in this forum, lol! Like you all, I listened to the show on Saturday nights, and talked about the songs to my nerd friends Monday mornings at school. I'll throw in "My Name is Larry", "Big Fat Irving", and "My Dead Dog Rover" ......   :rotf:

  • I did some country style ribs also yesterday.  I smoked them at 250 until the meat reached 165+-.  I put half of them in a beans mixture that my wife had made, covered the pan with foil and back on the smoker.  The other half after was put in a pan with onions, BBQ sauce and apple juice and covered.  I checked the meat temperature until it got 205+- and removed them.  They both turned out good , but with slightly different taste.
