Title: Picked up my Xmas prime rib.. part 2

Ok.  Looks like we are going to be getting a snowstorm late Xmas Eve into Xmas afternoon.

As my username suggests, I do property management. Which includes snow plowing.

So I picked up this PR last weekend. It's been in it's original cryovaced package in my project fridge at 38*.  Wasn't to concerned about leaving it in the fridge till Xmas day, but I might not be able to cook it Xmas day because of the storm. Might have to wait till New year Eve. So, should I freeze it for a few days, of leave it in the fridge?

If it is still air tight in cryovac I would be fine leaving it until then.
I have left large cuts for 2-3 weeks plenty, I always try as hard as I can to not freeze if possible.

You are Wet Aging it right now, the longer the better...
