Title: Beef Prices Near You

Just paid $2.99/# for chuck roasts at Giant.  Sam's Club was $4.20/#.  I bought about 25-30# for use in pulled beef and some to make fresh ground hamburger.

I have 3 go to markets for beef.  They are smaller chain markets.  Fairway, Stew Leonards and North Shore Farms (Mom and pop chain)

Fairway has prime Rib Roast for $10.99 Usually $23.99.  Gonna get me some tomorrow
Stew Leonards had last week on sale ground chuck for $1.99/lb Got 10#.  Whole NY Strip Loin for $3.99.  Bought 15# Bone in Rib eye 2" thick for $4.99 bought two nice steaks about 5#

For NY that's terrific prices

I literally live across the street from a beef operation and I cant find prices like that.  I need to get another freezer and just buy a steer from Dennis!

Around here chuck is 5 to 6 a pound. I ordered soe round chuck for the GFs nacho day on sunday and i think it is 5 ish a pound, but they grind it almost all day. This little store does have whole boneless pork loins for 1.99 have not seen them down that low for a few months.

Chuck here for the last 3-4 years has always been $5/lb., sometimes a sale but rare.  I gotta look for it next time I am in RD, for some reason, I do not think I have ever seen it packaged in the ones back here!  But that can't be right.

Beef prices at Kroger are ridiculous. >:(

$11/lb for chuck roast.
$17 for porterhouses.
$7 for 80/20 ground chuck.

I am taking one of those $3/# packer briskets and grinding it up for hamburger simply because it is half of what you are paying.

It is crazy here also.
14.99 for rib eye, 12.99 for flank and 6.99 for 80/20.
I wanted some beef bologna also and none, not in any brand. First time I have ever seen that?

I was looking at the prices at the beginning of this thread and forgetting it is 2 years old and thinking...how do I not live in an area where these folks are getting these great deals.  We are going to Costco tomorrow, will report back on over all meat prices!

Is your Costco limiting purchases to two (total) meat purchases?  The last time I was in the the Midlothian Costco the signs said limit of two meat purchases.

Here in central Iowa at Fareway stores they had pork shoulder for $.98/lb and brisket for $2.99.

 I already had three briskets  in the freezer that I got at Walmart for $2.97/lb a couple weeks earlier, but had not found any at either local Walmart for the since then. Fareway at that time had it for $4.65/lb. Sam's Club was at $6.50/lb.

I was just at the Sam's Club in Allentown, PA.  $2.98/# for prime packer brisket and $4.98/# for choice.  I don't really understand that other than the supply of prime must be too high right now.  I only bought one because I bought 2 choice briskets at Giant on Saturday for $2.98/#.  Now I have about 50# of beef brisket in my fridge in the garage to do something with this weekend.  Probably one for hamburger, one for burnt ends, and one for sliced brisket.

I saw a meat processor/market pop up on my facebook. I looked the address and figured it is only about 45 minute drive. We had plans change for last Saturday so off we went. The GF is not the meat market type, but they had baked good to so I knew she would be happy.
 I got a nice looking bone in chuck roast for $6 a pound, they had Arm roasts for the same I was going to get one of those before I found the chuck. Most of it is vac sealed and frozen. They had beef, pork and some lamb but no chops, I would have bought some of those. The Gf has never had them. They made up burgers with jalapeno and pepper jack cheese, about 1/2 pound burgers $8 a pound, packs of ground beef were $6 a pound these were not froze. Strip steaks were $9 I believe. I got a pack of sweet and hot jerky it was $33 a pound I think it was in about 1/4 pound packs. It was pretty good, as were the burgers and the burgers made from the ground beef. Will try the chuck probably tomorrow. It was worth the trip and she got chocolate chip cookies for $6 a dozen that she really liked, so I am set, we can go there again because of the cookies.

Slightly off topic with a discussion on beef, but for the second time in the last 2-3 weeks, Sam's Club had no frozen raw chicken wings, no pork ribs, and no pork shoulders.

I have been watching mainly brisket. It has been 5.99 a pound for the last month. Two months ago it just wasn't available. I saw yesterday it dropped to 4.99 a pound. it is normally 2.99 a pound. This is for Costco prime grade. I have a wedding I am cooking 5 briskets for at the end of July so I have been watching to see how much more it is going to cost the family I am cooking for. I am glad it is coming down as double the price can be hard to swallow.

Fredericksburg, VA Costco USDA Prime brisket. $3.99/lb, up about .60¢.  Choice Chuck $5.59/lb, (not completely sure) about the same.  Top Round $8/lb, about double. Belly, $2.99/lb, unchanged.  Spare Ribs $3.99/lb, up about $1.50.  Whole (11-15 lb.) Rib Roast $12.99/lb up about $4.  Whole NY Strip $9.99/lb up about $2.  Pork Loin unchanged, and twin pack of boned butt, $1.98/lb up about .20¢.  80/20 GB about $3.99/lb up about .60¢.

Could only by 2 - four packs of butter at a time, which seemed strange to me.  Limiting butter sales, are you all hording butter?

Was there a limit on beef purchases?  I haven't been to a Costco in over a month and there was a 2 item limit on any meat purchase at that time.   Hoarding butter-yikes what is next?

I will have to ask Bent if he remembers.  I don't recall seeing any signs limiting beef, fish or pork, but there was a limit of two on chicken purchases.  The strange thing about the butter is it was just packed with butter and did not look like anyone was buying.

I drove by our meat market and the sign out front with the weekly specials said T-bone $9.97 (probably Choice) and pork steaks $1.97.  I might get some pork steaks because they are usually fatty and I scored a 22 inch Blackstone for Father's Day and need to cook something like that to help season it.  No one has wanted bacon yet but me.

I remember about 5 years ago when you used to be able to get porterhouse on sale for $6/#.  I would pick out everyone that had a big fillet on the bone and buy whatever they had on the shelf.

I can see your point.  They are waaayyy better than pork steak, even when they are choice.  I'll run it by the girls.

Below is what we are looking at for next 7 days:

Wife is going shopping tomorrow at Smith's (aka Kroger).
A few things are on sale:
Brisket    $2.99/lb   will make ground beef out of it.  Cheapest ground beef here is $5.49/lb
Pork Loin $1.79/lb   going to make Canadian bacon out of it.
Pork Butt $1.79/lb   just going into freezer

Yeah, but your relative humidity is 10% and your dew point is 33°.  Try 65% RH and a dew point of 67°!  Your numbers here would feel like a 78° day!

Yeah, current heat index here is 98° even though real temp is only 88° with dew point of 73°.  I think the dew point that high is in the range for strong thunderstorms and potential tornados.

First the beef prices: My wife picked up a couple of roast yesterday for $2.97/lb., one was a cross rib and the other was top round. The cross rib was cooked in the Instant Pot last night and turned out superb. After dry brining for a couple of hours, the top round is in the sous vide be be smoked tomorrow.

Now for the weather.

So Fredericksburg, VA Costco.  National Beef, one of my favorite brands,  USDA Prime Rib Roast, $9.99/lb, USDA Choice $8.99, just dont get it! We have been asked to cook a rehearsal dinner in a month for about 60 people, so picked up a little over 30lbs.  They wanted Rib Roast, so sweet deal for them.  Will Wet Age it here a few weeks and then cook it up on Memphis.  Will be Cesar Salad with Rib Roast, twice baked potato, glazed carrots, various cheese cakes and pie for dessert!

That sounds really good!  Brisket is $2.99 for a packer, $3.49 for Prime 1, and $3.99 for a trimmed Choice.  Don't make no sense to me.

I think the shutdown or slowdown of many restaurants has caused prices of higher grade meats to drop because the supply chain was already raising that type of meat and has had to lower the price to be able to sell it to consumers rather than restaurants.

Now it makes sense.  I'll be cooking my first prime brisket tonight because they were $4.99 a pound before all this started if I remember correctly and at one point they were $7.99/lb.

They lost their mind on that tenderloin.  It was $14.99/lb the last time I ought one, and I know that was less then 2 years ago. As I look at the prices on the NY and the Rib Roast, and I think of the prices at Giant 2 weeks ago, I should have bought the Rib Roast!

I got four pounds of 80/20 at a local market for $3.79/lb and was happy to get it.  For some reason Sam's does not have 80/20 anymore.

Yes meat like other food products continue to sky rocket in price however I will continue to support my butcher.  They are a small family owned business who have always treated me fairly over the years so I might by less but will continue to support them.

Local Hy-Vee grocery store had brisket for $2.98/lb I waited to long and they were out along with all the Hy-Vee's in the area. Got a rain check though on it.

I hope this is a trend throughout the Nation.  I know President Biden is trying to apply pressure on the Meat industry and Beef implicitly.  So I hope this is a by-product!

I had someone come up today selling cases of frozen meat.  The very fast talking man said it would round out to be about $11.00 a pound for a mixture of steaks and one box of burgers.  I took a pass on it.  What normally would sell for $600 he would sell for $450.  It was an easy decision for me being my freezers were full already.  I wanted to keep the pamphlet, but he wanted it back.

Where I don't normally buy meat from Walmart I may have to.  Sam's Club is higher plus the packages are too big for the high cost.

That was the price I saw for Select at Sam's today.  I glanced at the meat price labels as I pushed my cart past them and decided they were all too high for me to buy any meat today.  I will (and probably should be anyway) continue to eat what I have in my freezer.  And, they had no frozen chicken wings again.  But lots of toilet paper.

Been trying to do this for 18 months, and now with lots of stuffed green peppers, red enchilada sauce and a lot of berries in it, it is even more imperative!


I will (and probably should be anyway) continue to eat what I have in my freezer.

While at Sam's Club I picked up some beef that has been marked down.  I guess they are not selling everything by the date required.  The chuck roast were marked down $1.18/lb and the bottom sirloin cut in strips were reduced $1.85/lb.  The sirloin strips has a lot of marbling, so I don't know how I will cook them yet.

He noted the discount he received per pound not the final cost per pound.  I think that mislead you.  If it were $1.18/# I would buy a new freezer and stock up.

Yesterday we visited our rancher friend to grab what we could, I spoke with him friday and had him set this aside for us. I hooked up with him a few years ago and he never dissapoints. We wanted to grab some steak cuts but by the time we got there he was out of virtually everything, he does “pop up” events at a couple locations each week. I called him after we left and asked him to set aside some rib eyes and filets for next weekend, he said the 3 places he set up at yesterday basically sold out. Elm Creek beef is his operation. It can be found on the www. Best beef short ribs I have ever had, tons of meat on them, that is 2 bones in the pic.

I will happily hook you up with him, he is a great guy and I am sure he would do everything he could to make you happy, he is the real deal. Everything we have gotten from him has truly been very good. You can find him on “fakebook” and www. The filets are about 2” and the ribeye about 1.5”.

I forgot to say that once we couldn’t get steaks from Elm creek we looked at Sams for some. Should have snapped a few pics but no way would I pay what they were asking for ribeye and filets. Prime were $22.00 & $29.00 respectively, no thanks.

On a different note we are going to try braising the short ribs for a Korean style dinner that caught our eye. We ordered some gojuchang sauce (check spelling) and looking forward to at least a try, kinda sounds good.
I also am going to dry age another rib roast, trying to work on the timing, not sure if turkey day or Christmas but I really want to age a little longer this time. I don’t take notes and can’t find the thread but I kinda remember and quite honestly, it was incredible. I want to top it this time.

Yesterday we visited our rancher friend to grab what we could, I spoke with him friday and had him set this aside for us. I hooked up with him a few years ago and he never dissapoints. We wanted to grab some steak cuts but by the time we got there he was out of virtually everything, he does “pop up” events at a couple locations each week. I called him after we left and asked him to set aside some rib eyes and filets for next weekend, he said the 3 places he set up at yesterday basically sold out. Elm Creek beef is his operation. It can be found on the www. Best beef short ribs I have ever had, tons of meat on them, that is 2 bones in the pic.

Their prices are cheaper than Sam's Club if it is Prime.  Their Prime Ribeye cost is the same cost as Sam's Choice cost.  They are about four hours away.  How thick are their ribeye's?  I use to buy a side of beef each year with my tax refund money many years ago.  I keep looking for a local rancher/butcher to do this again.  But as I got older I wanted to get a better grade of meat than what I did 40+ years ago.  I don't know if I could do this with a side or quarter of a beef or not.
I will happily hook you up with him, he is a great guy and I am sure he would do everything he could to make you happy, he is the real deal. Everything we have gotten from him has truly been very good. You can find him on “fakebook” and www. The filets are about 2” and the ribeye about 1.5”.

We should try and get together if you want, we can possibly split a half etc. It truly is good stuff best I can tell.

I swung by my local Costco in Livermore, CA on Friday.  The prime brisket price floored me....$5.99 per lb.
The bad news as of last Friday is Costco brisket prices are holding at $5.99 per lb. However, the good news is the selection is great.  There were more than 20 available.

Wow that is a great price.  I couldn't even tell you when I have seen it that low.  Easily 3+ years.  I think they run about $6+/# here right now.  And, I just opened my last bag of pulled beef from the freezer so I need to buy more to make and stock up the freezer again.

I thought I had one in the how to beef section, but apparently not.

I smoke at 250°-275° until about 160° IT.  I then put in a pan with several beers to cover about half of the meat, and foil.  Continue to cook until the meat falls apart easily with two forks.  I pull it apart immediately in the juices and throw in sliced peppers, onions, and mushrooms for about 30-60 minutes.  Pull from grill, pour off excess juices, and start eating.  Unfortunately, it is usually about a 6-8 hour process to get that meat tender.  It probably took 10-12 without foiling in a liquid.  I put the veggies in late in the process now as I have found over the years since I first saw this method on the old site labeled as Pepper Stout Beef that if I put them in early in the liquid the peppers tend to only leave the skin behind.  Putting them in later allows for them to be soft but still have texture.

Got a rain check for $2.98 lb brisket from our local Hy-Vee.  Walmart has brisket currently at $4.48 with the sell by date on a few of them at 9/27. May go back tomorrow to see what the price is on them. Nice to have options for lower pricing on brisket.

i just made a gravy with the juices and served everything over rice with a side salad.I pulled the meat at 203° but it was not fall apart tender so Iput it back in at 300° for another hour, the IT was 209° for that hour. It turned out very tender and moist with virtually all of the fat/connective tissues rendered.

If you are looking at just making fall apart pulled beef, take a look at this. The secret I found was the going to an IT of 210 and holding for at least an hour.

I didn't make this up. I read it in someone's blog that I have not been able to find again. It works, though. Before I did that shredding was a chore. Now the beef almost falls apart on its own.

I have now done about 22 chucks this way in the last year and a half.

I have some tri tip from costco.  $9.99 from February (in the freezer at this point) of this year for two.   $15.99 I saw last night.   I was floored.  I did not buy any.

When I moved to NW Arkansas I moved away from any Costco's.  But in a few weeks I will be going to Gulf Coast Alabama to visit friends.  I plan on taking an ice chest just in case their meat is cheaper than Sam's.  I prefer St. Louis Style ribs and Sam's only has the pre-seasoned one's where Costco has them without seasoning.

You could always buy the spare ribs at Sam's and cut them to STL on your own and use the residual meat on bones and cartilage to pull for some other use - tacos, chili, topping on baked potato, nachos, etc.

I was browsing the beef isle for stew meat yesterday and saw choice brisket at $9.99 a pound at Meijer's, (a regional grocery store). I have always found their prices to be middle of the road, but the quality is usually fairly good. My heart skipped a beat from shock and I just kept on moving. I ended up with some bottom round on clearance for $4.99 and chuck roast on sale for $5.25 a pound. I also got a pork roast for $1.99

I bought two prime ribeye roasts from Costco earlier in the year that were butchered into steaks, vacuum packed and frozen.  It was my way of avoiding higher meat prices for at least a while.  The first pack was great.  However, the second pack purchased in April was horrible.  The steaks looked perfectly marbled but were pretty tough.  I would rate them below select.  It must have been from a very old cow.

I really don't think we're out of bounds.  If housing is up 20.4% year over year.  Beef prices are up 30% since January.  Take a look at used car values.  Beer prices honestly aren't that bad compared to other items.   The thread can be summed up by massive inflation.   The likes of which we haven't seen since the late '70's / early '80's.

I’ve had a rain check from Albertsons for about six weeks finally could use it yesterday. 19 pounds of ribeye normal price $290 picked it up for 110. Butcher did a great job and even let me get them cut 2 inch thick.

I don't know if something is changing, but at Sam's today their ribeye prime and choice steaks were a $1 a pound cheaper.  I think their chuck roasts were a $1 a pound cheaper also.  They even had some 80/20 hamburger for $3.98 a pound.  Their brisket packers were $4.98/lb for choice and $5.98/lb for prime.  They had stew meat marked down to $4.98 a pound.

I checked out a local meat market and their prices were ridiculous.  They wanted $10 a pound more for choice ribeye's.

For steak on a salad I prefer a vinaigrette made with red wine or balsamic vinegar.   I also like a Chimichurri or a vinaigrette version of Thai crying tiger sauce.  Ceasar with grilled chicken.

My wife makes a version of this by combining the Hidden Valley ranch dip, tub of (16 oz I believe) sour cream, a washed bunch of cilantro, and a 4 oz can of nacho sliced jalepenos.  She tosses it all in the blender and comes out about the same consistency as ranch dressing (maybe a hair thicker).

Just got our Pfizer booster shots and went across the street to Smith's (aka Kroger) and did out shopping.
Here are some of the meat prices:
I did pick up a couple T-Bone's at $7.99/lb since it is wife's birthday in a couple days.
Added a pound of peeled-shrimp, tail on as well.
One advantage on making a birthday meal for someone, you get to enjoy it too.  ;D

$4.99 choice tri tip at Freddy's (Kroger) this past weekend.  I grabbed two that looked prime to me.  The rest were obviously choice or trimmed improperly.  Anyway, I would have grabbed more if I had any room left in the freezer.   I'm full with two turkeys and 15 gigantic drumsticks as I was fearful of supply issues for Thanksgiving.

USDA Select Strip 16.5 lbs. before trim. 12lb. after trim. Normal Restaurant Depot price $8.71, it was on the Bargin table for 25% off, or $6.54/lb.  I think it has pretty decent marbling for Select, I also was sure it was Rib Roast when I trimmed off piece to even up.  USDA Choice Outside Skirt $6.98/lb. (in vac seal bag, 5 individual pieces when opened.)

I have 55oz of the Strip, 68oz of the Skirt and 36oz of the Strip trim that will be ground in about an hour when it firms up in the freezer.  Then I am going to have a Cheeseburger with my blend for dinner!

I was in H-E-B earlier in the week and a lady on a scooter was looking at what I think were full prime rib roasts.  They were the size of a packer brisket and cylindrical shaped.  She was asking who in their right mind would pay $350 for a piece of meat?  I couldn't get close enough to see it because several folks were standing around her and the place was packed.  Hopefully there will still be some next week and I can see what they were and how much a pound they were.  I thought to myself I could get a baby calf for that much.  At least I could 10 years ago when I had cattle.

Merry Christmas to Everyone.
It has been awhile since I have been on. Health issues have really taken there toll this year.
I pray I may see another Christmas with none of the problems. LOL

I won't disclose the price of our Roast Beef this year as it is Prime Angus Beef from a Butcher that we trust. 18lbs, 8 ribs, large end. We have about 14 people to feed this year. It is unreal. This is the most exquisite roast I have ever cooked in all of my years.
I will get pictures soon, it is now resting in FTC (start of FTC was 118*)  this should allow a good section of very rare for the many that like it that way, I estimate final temp in the middle area to be around 130*, all while the rest of the meal is finished up preparing.

While at Walmart this morning I was browsing the meat section for reduced prices.  The choice angus prime rib roast were reduced from $11.97 to $5.38 a pound.  I got three of them.  They averaged about 6 pounds each which is perfect for my wife and myself.

Some great deals!

I had started clearing out the freezers which was good timing.  I just vac sealed the leftovers from Christmas day.  I also have over 12 dozen bags of 12 pierogies.  Most of them will get made tomorrow for a beer drinking day with my buddies.  Quite a few different flavors which I never had including roast beef, hot sausage, potato and bacon, garlic parmesan potato, etc.

I have come to embrace High Quality ground beef, so I would have no problem grinding those roasts, even at $5+/lb.  Just to many dishes I like that call for GB and why not have quality flavor!

I've started grinding brisket for burgers, chili, etc.

EDIT:  Actually started grinding my own back when the revelation of pink slime in ground beef was made public.

They are not as bad as I though, but it is hard to pull the trigger on a $270 hunk of meat...and I know how good it is going to taste.  Not sure why the huge discrepency between the Rib Roast and Strip.  Historically here, they are about $2 apart!

Picked up a Prime Brisket at Costco today.

As a result of this trip to Costco, I learned a valuable lesson...
I should NOT go shopping with my wife!  We spent about $300 more than if she had gone by herself.

IMO we have not seen the top.  Until fuel prices drop especially diesel these cost are going to continue to escalate. I have seen some of the items I buy jump 20 percent or more. I have not been to my butcher in a few months and I must admit I am scared to go

I believe inflation is part of the law of supply and demand.  Right now we have low supply on a lot of things and high demand for those same things.  I don't see the supply chain fixing itself anytime soon.  Thus, inflation is not decreasing until people stop buying those things that have had price inflation.  That includes gas and diesel.

If inflation was only related to the supply chain issues caused by covid, I think you have a good estimate for timing.  If there continue to be military conflicts and severe sanctions involving countries that are major international trade partners in energy, technology, or food related products, I think it could take longer for prices to reside.

Prices have definitely gone up.
A year ago I could buy A&W Root Beer (16oz.) six-paks  at 4 for $10.
Yesterday they were 3 for $12.  I didn't buy any.
$2.50/six-pak to $4.00/six-pak. That's a 60% increase in 12 months.

Choice Tenderloins at Costco yesterday $15.99.  Prime were 20.99.  I found some Choice that looked as marbled as the Prime and bought several.  I'm more of a ribeye guy but my wife loves the tenderloins. May go on a T-bone search; wife gets the tenderloin, I get the strip.

I thought $10.99/lb was such a great deal for the Rib Roast, as the last time I was there I think it was $14.  I had forgotten that 18 months ago it was $7.99/lb!  Butt was up about .40¢ and GB about .10¢ from there low's!

Awhile back I bought USDA boneless 2 1/2" NY steaks for $4.97/ lb., am fixing two of them for supper tonight. They are already seasoned, so the game plan is to SV, sear, and serve with sauteed mushrooms, green salad, mashed potatoes and a broccoli/cauliflower casserole.

I've seen tents set up, but I'm skeptical at those prices.
I would guess you can see either daylight through them, or you have to sign an annual contract to have them delivered monthly at regular price.

PRIME strips 12.99/lb and Choice strips 9.99/lb at Costco. All the primes were gone when I shopped, but some of the CHOICE strips looked very marbled and at $9.99, I could not resist. Have to be careful and be picky to get uniform thickness, and good parts of the strips.  Some of the offerings were not acceptable, i.e. small end pieces, uneven thickness, too much fat cap, etc. I got a nice pack of 4 (4.5lbs).  Now vacuum sealed and aging in fridge. Each one will feed both of us as we both are limiting portions and I think 8+ oz each is enough for me. We both like the same doneness so I don't precut them before grilling. Bon Apatit!

I've never been concerned about weight after trimming, but If I was, I'd just weigh the fat and subtract from 15.

My cooks for brisket and pork shoulder last year trimmed back almost all of the exterior fat.  I wanted more rub on meat that I will actually keep which is why I trimmed aggressively.  Both cuts have a lot of fat on the interior to keep things moist.

Hard to know without knowing the exact trim you are going to do.  You will have almost no trim on top.  Bottom could be as much as 2-3lbs.  If you are going to take the deckle fat out, that could be another pound.  Trimming down to a 1/4 inch of fat, I could see as much as 4lbs. being removed.


I bought a Costco Prime Brisket 15 lbs.  How much will it weigh after trimmed down to cook?  (1/4" fat on one side only)

I know that this is unconventional, but when prepping a packer I separate the flat from the point and remove all visible fat from all sides. My thinking is that more meat is exposed to seasoning and smoke. Of course I only smoke to an IT of 120-130°, then sous vide at 132° for 48 hours. Result, Medium rare brisket.
