I recently picked up deals on an Air Fryer and a Food Processor. I need to quit buying things though, but the Air Fryers might be of interest to others.

Charcoal cabinet smoker. I have been looking at T&K smokers and Pitmaker in Houston. Hopefully within a year.

Probably nothing as I have a garage full of stuff. If anything, it may be an LEM meat mixer.

I also have more stuff than any one person needs, my issue is it is all bigger (grinder,Stuffer,Slicer and some other items) I have no place to just set it up and forget it until I need it. So I am into buying smaller stuff now, bought the small grinder, should have a small stuffer in the next day or so and bought a used 10" berkel as it is easier to move than the huge 12" globe.
Couple of ideas to add to your list could be stuffer, Dehydrator, Dry age cabinet. (I have one of the original steakagers from their Kickstarter, have not used it much.)

Slicer/grinder/knives were on the list for me. Like glitchy, we purchased an air fryer recently which we use quite a bit and really like. The newest addition was a Vita Mix machine my mom gave us. You might ask what does a Vita Mix machine have to do with cooking? Last weekend we made a cream of broccoli soup in the mixer. "Blended" the ingredients on high speed for 6 minutes, and the soup came out as hot as if you cooked it on the stove.

Love my Vitamix, when I bought min the last GF looked at me and said, You spent $600 on a blender? but she really like some of the stuff i made with it. If you like silky smooth apple sauce, this is the thing to make it. I pressure cook my cored apples first.

Even though I did not need them, I purchased a couple of these ( https://www.amazon.com/gp/product/B06ZZRR7XD/ref=ppx_yo_dt_b_asin_title_o02_s00?ie=UTF8&psc=1 ). They seem to have some advantage over the more common brand, they will not roll, they have a lip at the opening that keeps the pellets from falling out and they are half the price. A lot of people use smoke tubes and there are a plethora of configurations, a test of the various versions might be a worthy endeavor.

Have you had any luck with getting them to produce good smoke?
I had the Amaze-N Maze and I gave it away, it just never would work right and it produced horrid acrid smoke.

I have not tried them yet but, other than the items that I mentioned above, I've not had a problem with the ones that I already have. First of all, I light them with a torch (I let them burn for five or ten minutes to insure good start) and place the tubes in the bottom of the pit near the fire pot/deflector, secondly, if doing cold smoke, I disable the auger and igniter and just run the fan.

running the fan seems to be the key. I felt like yorkdude about the acrid smoke, but with the fan running ... well it seems to be a fine solution for cold smoking. I don't bother with it for a normal cook. No need on the Gator.

I did not ever run the fan, I always was going to but I just gave up on it.
I did however let it burn (after being torch lit) for about 15 minutes just outside on a rack and it still seemed like I would not have liked it.
Probably operator error on my part, just didn't get too excited about messing with it.

A few questions to get some more information before I vote
1) Bentley - what are examples of what are being considered as food containers?
2) All - for those that have electric knives, what do you use it to cut and why do you prefer it over a manual knife?

I did not realize I reset the numbers, I thought I just put up the top 3 for folks to see. And container you want!
Question number 2 is easy, bread, and roast are the top 2. Easier to control portion. Also watermelon and pineapple skin removal.

I voted for the knives. I am looking for a good slicing knife. I currently use an 8". Would like to graduate to a 10" or longer for slicing brisket etc.
