So I went to a great local butcher, Double DD Meats in Mountlake Terrace, WA. Asked for two untrimmed briskets, hoping they had some...lady goes to the cooler and comes back with two briskets, says something like "OK, we just have these two, one's 19 and a half, and the other's twenty pounds." I'm thinking "Score! It's Brisket Time!(tm) :cool:" She must have people balk a lot, because she says "Do you want them?" with a tone that sounds like she expects me to say no. I did not. ;D
Maybe it's not common in the mainstream public to get large hunks of meat to cook, but I would think that if a person is specifically asking for a large cut, they're going to take it when offered what they ask for. It surprised me. Anyone else had pushback when trying to buy large roasts/butts/whatever?

I see brisket at Freddy's here for 8 bucks plus per lb. Size does not matter. No way am I spending 7.99/lb for brisket when prime rib is 6.99 ::)

What grade are the briskets? I used to go to Double DD Meats a lot until I realized that a lot of what they sell is USDA Select. Costco is just down the street from there and they always have Prime briskets.
I also have found several of the spices and rubs they have at Double DD Meats were expired.
The deli meats are all over stock.
Really nice people but I think I outgrew them.

I am a big fan of Bob's Quality Meats in south Seattle. They're my go to for sausage. I tend to get all of my beef and pork at Costco though.

I allways buy my briskets from Cash and Carry (restaurant supply) whole packers only but usually about $2.50 a pound, angus for 10 cents more. Anywhere that has broken down packers it's usually 2-3X that.

Your best friend if you can find one.
I'm lucky, we still have some local ones that are very good.
Grocery stores, not so much.

USDA Choice. IIRC, $3.99/lb.

They were USDA choice. Costco would be my store of choice (and probably will be in the future--it's just down the street from me) except: 1) Crowded--I hate that; 2) They debone everything! Not an issue for brisket, clearly, but I like that blade bone in the pork butt--the costco twopack butts kinda fall apart on one end and I need to tie them. They even deboned beef ribs!

That's a sad but true statement. My Publix and Sam's has butcher's but it's not the good kind, they make a mess out of what they cut.
