I bought a nice looking pork belly from the Asian market that is vac sealed and frozen.
It is skinless and pre-sliced into thick slices...approximately 1/4 inch...maybe a hair thicker.
The belly is roughly 9â€x9†and is raw, not cured, not smoked.
Any suggestions on what to do with these slices?

Grind them up and make sausage.

Cure them and make bacon.

Since it's sliced so thin, just season, throw it on the pit and cook it like thick bacon.

Bacon Bites!
Season them with you favorite rub
Cook until 200 degrees
Sauce them with your favorite BBQ sauce
Chop into chunks

Grind some to put in your burgers

Oh yeah, I forgot about them. Very tasty.
Don't know if that will work for Ralphie as his belly is sliced already.
Smaller pieces maybe.

It is not bacon, it is sliced pork belly. There is a big difference, why I said grind it!

Yeah, would be Pork Belly bites. Which are good.

Roast it or Chinese twice cooked come to mind.

I have made Bacon Bites with slabs of bacon and uncured pork belly. Either way it is :lick:. Call it whatever you like.

i would cure it, probably could be a 24 hour cure, i would do 2 days. then make pig candy with it. or breakfast with some eggs and good rye toast.

Thanks for the suggestions. Leaning towards doing those bacon bites for half and the Chinese twice cooked style...maybe making banh mi sandwiches with that half.
Here is pic of it. The slices are about 1.5 pencils thick.

You go to a Korean BBQ and they slice it in pieces and you cook it on the table grill.

That’s makes sense. I bought this at a Korean grocery store.
Gonna give it a go next weekend. I’ll come back with pictures.

One of the local high end restaurants here serve roasted pork belly chunks as an appetizer. They are a little fatty for my taste but otherwise are very tasty.

I've been to Jordan's in downtown Chicago before and they have an appetizer that is double smoked bacon with a maple glaze on it. I get it each year I go to Chicago for show I go. It is as thick as the pictures shown and it is out of this world.

I believe I had that there. I am not sure it is open anymore though.

If you're into Korean food, BBQ or Bulgogi would work.

I prepared the pork belly slices two ways.
Marinated in Korean bulgolgi and broiled...served as a banh mi sandwich with pickled carrot & daikon, pickled red onions, cucumber, cilantro, and siracha mayo.
Second half was seasoned with BBQ rub, smoked, then briefly broiled with bbq sauce. Served on a sandwich with slaw and pickled red onions.
