Traeger posted a recipe this past week on Baja Fish Tacos. I have never had a fish taco but decided to give this recipe a try. I used the Alaskan wild caught cod and mesquite pellets. It came out real good. We needed an alternative to beef and pork when we have folks over to eat. Their a lot of people that will eat seafood but avoid pork and beef.

I was skeptical the first timed I heard of Fish Tacos. Just didn't sound very good.
Once I tried them, I changed my tune. Pretty good.

I too was skeptical when my wife first ordered then at a local restaurant, they are quite popular here in AZ so I tried them and I agree, very good.

Question: your tortillas look particularly good. What brand? Or homemade?
Lately I’ve been on a quest to find the best flour tortilla, preferably large burrito size, but any size will do.
I’m trying to find what I remember from the burritos in taco shops from my days in San Diego. They are also prevalent throughout Southern California and probably Vegas and AZ.
Is anybody else aware of the flour tortilla style I’m referring to? They are richer and have more chew than the regular fluffy supermarket brands.

I’m trying to find what I remember from the burritos in taco shops from my days in San Diego. They are also prevalent throughout Southern California and probably Vegas and AZ.
Is anybody else aware of the flour tortilla style I’m referring to? They are richer and have more chew than the regular fluffy supermarket brands.
I know what you are taking about, but have not seen them in years.

Fish tacos look great and I love the spread. I have them all the time, at home or in restaurants. One of my favorites. I have made them with halibut, cod, tilapia, etc. all are good. I believe “Baja” is for battered and fried version of fish tacos. I may be wrong, but that is what I see in CA.

I enjoyed the street ones in Rosarito & Ensenada. They were always fried and much simpler then yours, yours are beautiful and I bet very flavorful. Do you ever do just cabbage & mayo with some garlic & lime juice? Cod is a great choice, wonder what Alaskan taste like?
Since he has never had a fish taco before this he probably has not Mr. Nimrod!

I don't eat fish so I never had them. I did used to spend some time in Ensenada for work though and go out for lunch at the local stands.

The best to me are the very thin ones made with lard. The thick fluffy name brand ones are no good and made with chemicals. I get them at Mexican markets or burrito shops.

Very much so. And there are none in Mayberry, and none within about 1500 miles of it I believe! Maybe if I got to Texas!

The tortillas I used were from the local Safeway. They were pretty thin. In California, there are lots of tortilla choices.
