Title: Non-Mechanically Processed Chicken Roll.

So I have these 4 inch, fibrous 20 inch casings that I was trying to figure out what I am gonna do with them.  It dawned on me that Kristin likes this Hillshire Farms chicken sandwich meats.  Pays anywhere from $3.50-$5.00/lb. for it.  You all know me!  Chicken parts is about 1/2 to 1/3 that price!  So, here we go!

2268g of Chicken.
1134g of breast and thighs.
150g of thighs skin.
23g Kosher Salt. (1%)
12g Garlic powder. (0.5%)
12g Onion powder. (0.5%)
181g of Filtered water. (8%)
8g Trisodium Phosphate.
5g Cure#1.
2g Sodium Erythorbate.

One grind through 3mm plate, mix ingredients, sit refrigerate for 1 hour.
Stuff in casing.  Cook in 190° water bath till 155° internal temperature.

Will have to flip, how many times is anyone guess.

Been if fridge an hour, just sliced up several pieces and had sandwich.  It is Great!  if Kristin does not like it I will eat it all!  Pictures tomorrow!

To much Garlic & Onion powder for Kristin, but I love it!  I have the other half of the breasts and thighs, so will make her new one.  Will coarse grind it and see if that makes a difference in texture! About 5 slices for a 1/4lb sandwich!

Looks like it came out pretty good.  Nicely done with the hand stuffing.
I'm with Kristin, if I can taste garlic, it's too much.

I used the stuffer to pipe it!  Would not have the patience to hand stuff!

Ah, when you said non-mechanical I thought you meant hand stuffing.
