Title: Thor's Hammer Nachos

Thor's Hammer (frenched beef shank) and nacho fixin's.   180 for 7 hours (probably too low of a start, but rendered out really nicely) wrap, beef tallow 250 for another hour.  One hour rest.  The silver skin didn't fully render, but the rest was perfection.  Lawry's plus pepper only.  Very rich beefy flavor.

A cool idea.

I've always liked building my own nacho plate rather than having someone put the ingredients on in different piles.

Looks great, I would probably just eat the meat and forgo the rest of the items. I do like a good beef shank.

Never seen Nachos done that way.  I like it, nicely done!!!
