The GF takes a lot of stuff to work that gets made here, Saturday night as we were out looking at Christmas lights one of her coworkers messages her and asks if I make pierogis? I said I don't ever remember making them but they seem simple enough.
Yesterday I decide to give it a go, watched a video from The Polish Chef on YT, and made some pierogis. They were not pretty, and at the start I thought this is harder than it looked, but as I got to the other half of the dough is became a little easier and better looking end product.
Dough was
4 cups flour
1 teaspoon salt
2 eggs
1 cup water
Mix well and then leave rest in a covered bowl.
Filling (what I used, you can use a lot of different things)
Cooked whole potatoes then peeled and put through the ricer.
I shredded some sharp cheddar
cooked of some onions in some butter
salt and pepper.
Then cover this and put in the fridge to get cold.
Rolled half the dough out to about 1/8" and used a 3.25" circle cutter.
1.5 tablespoon scoop, then folded and stretched the dough over and pinched well to seal.
Boiled about 5 minutes in salt water.
We had some of them browned on the griddle with cheesesteak quesadillas for dinner. Not bad for a first time.
She took some along for her coworker who had asked, so if they are to her liking I guess we will be making her a few dozen for her Christmas Eve no meat dinner. Her father is in a nursing home and her uncle is out of town, and they apparently knew how to make them and she did not. I told her YouTube could each her how to do it.

I grew up in an immigrant household in an immigrant neighborhood. I'd not heard of them. I had to read Wikipedia. They remind me of ravioli.

Pretty much just a dumpling, you may have had one and it was just called whatever it was called from whom ever made it.
Ravioli would be about the same thing just a different shape and filling.

They look good. I am not sure if I have ever had one!

I have made Jiaozi, which are the Chinese dumplings (aka pot stickers). They look fairly similar during preparation.
Learning to form them is a trick. We had an expert teaching us. Like tamales, these are a great holiday treat since you can get the whole family involved in making them.
We did them for Christmas a few years back.
