Title: Internet food experiment
Post by: Kristin Meredith on November 23, 2024, 06:45:32 PM
I saw a dish like this on the internet on one of those reels videos on facebook. There was no recipe attached so I just had to make my own recipe.  I was afraid it would be a disaster, but it turned out ok.  I learned a few things and will tweak it next time, but not a bad brunch dish I think.

I used a spring form pan and put a round of store bought pie crust on the bottom (what I learned is that I will par bake it in the future).  Then a can of crescent rolls around the edge putting pretty close together.  Then a shallow layer of grated cheese (whatever you choose), then a layer of cooked sausage (probably about half of a Jimmy Dean chub, then the eggs.  I beat 4 eggs and about 1 to 2 TBS of heavy cream, but I think I could have gone 5 eggs, maybe six. I poured the egg mixture over the sausage and it stayed inside the crescent roll ring.  Baked at 350 degrees for about 25 minutes -- I don't know if more eggs would need longer. It is a balancing of cooking the eggs without overcooking the crescent rolls.

That looks good and fairly easy to make. I belong to a group that meets once a month for breakfast. They usually pick up a few breakfast pizzas from a local store, but they are kind of pricey. This would probably be to their liking. However, my guess is they will want to pour sausage gravy over the top!

That looks good, I would probably have to add  in some peppers and onions with the sausage, jalapenos more than likely.   I would probably use a flour tortilla on the bottom because I would be to lazy to make pie dough unless I had the ones in a box here.  Now to go find my small spring form pan.

If you make one with a flour tortilla let me know how it turns out. The reels one had bacon, which I like fine, but sausage was easier to cook!

Sounds good to me, I'll have to give it a try. I'm always looking for simple breakfast dishes.

Gave this a try this evening, execution was not so great, but it was good.

Could not find my  normal size spring form pan but found this 6" one. Used a tortilla for the bottom, had a can of crescent rolls and used 5 to go around the outside, some shredded cheddar, cooked half a chub of breakfast sausage some green peppers and onions, mixed up 3 eggs, did not use all the sausage mixture nor all the eggs. Cooked for 30 minutes at 350° added a little cheese on top about 10 minutes before it was done.

Crescents were cooked nice, the eggs were cooked enough for me, the GF would like them cooked more, but she liked it, so it will be made again.

Eggs seemed to leak out around the bottom of the pan, made a mess will have to soak pan for 3 days probably.

Next time bigger pan, I may need to just go buy one, I will use a tortilla again and maybe try to find one larger than the bottom so it can wrap up the side some to cure leaking issue I had, possibly. Not sure if they make crescents in only one size or if they make larger ones, if they make larger I will try them.

Looks good!  I did not have any leaks, but I think that was because I could take the pie dough and make it go up the sides a bit.  Will be interested to know how a bigger tortilla works.  Thanks for sharing.

Gave it another go this morning since I still had half the sausage left and a can of rolls.

Much better out come. Only real problem was I forgot to spray the pan. so  it stuck to the sides and some egg got under my tortilla and it stuck to the bottom also. Next time I will put a piece of parchment paper on the bottom and remember to spray it. used 4 eggs and with the peppers and onions in the sausage it filled it up pretty well. added the cheese to the top for the last maybe 5 minutes.

We like it, for me I would be just as happy doing a fritatta, and if I want the rolls put them in while the eggs bake. But she likes the the rolls baked in to it.

Your cross section looks like it has much more sausage!

My picture taking is far from great, I copped some onion, green pepper and jalapeno in with the sausage when I cooked it.
