Title: Shoulder Score
Post by: ZCZ on October 21, 2017, 12:51:23 PM
$0.99 per lb. for bone in pork shoulder at my local Cub grocery, today only.

Limit was two so I took the two largest ones

Been quite a while since I cooked one of these. One going in the freezer and one going on the grill.

Got up at 2:45 AM or so to prep for smoking.
Trimmed some of the fat off what will be the bottom side.

“Top” side

Using a little “Rabbit” for glue. Used this in the past & seems to intensify the bark

With glue & rub applied. On the Pro at 3:20 AM

Running at 225 for what I am guessing will be a 12 hour cook and done around 4 PM. Should be cooled down and pulled in time for pulled pork sammies for supper.

Here’s a check at the 5 hour mark this AM. Have not checked the internal temp yet.

Stay tuned.

A shot of smoke output. Sometimes more, sometimes less as pellets dump.  Sometimes it appears non-existant because it is a thin blue smoke.

Internal temp 179.8. Mid 180’s on the ends. Low & slow. Still cruising at 225.

Ran for 12 hours at 225. Wrapped in foil & bumped to 250 for another 1.5. Pulled at internal of 205.

Fell apart quite well

Ohh yeah...I would have the chute that leads right to the snow half-pipe that would shoot me half way up your house, then right back towards the hill!

Did you foil at the end to mellow out the bark or did you just ride with it!

Doh!

Indeed we did. My wife likes to put the slaw on top of the meat inside the sandwich.

Neighbor was drooling all day so I made up a quick sandwich for he and his wife. He has a Pro, too. He shared some apple pie he made yesterday so must return the favor.

I foiled to hurry it along.

Thanks for watching,
