Hi, gang. Swamp Boy will be in Memphis in about an hour. Wants some pork ribs. How bout it, Toddler/ Anybody got suggestions?

Yep, one eye and new hip still kicking, but not far from home. Medical profession insisting I eat their menu. Ugh. I need my fries!

 If it is a cooking procedure you are after, this is how I do my back ribs;
 
 Coat with maple syrup A good 24 hrs before applying the drugs rub.

 One hour before the cook, apply dry rub.

 Cook at about 250 to 275º for about 3 hrs, bone side down. Check for pull-back on the bones and the bend test to establish doneness...

 If applying sauce, warm it ,then apply for the last 15 min of the cook..

I am sorry I missed this Buddy...Isn't the Rendezvous in Memphis?  The Stones ate there!  Spare Ribs cooked over charcoal with a dry rub finish.

Sorry, I missed this too.  I drove through Memphis yesterday on my way home from MS.

Corky's (ate here but wouldn't recommend even though it is extremely popular)
Rendezvous (ate here, but a long time ago...would recommend from what I remember...usually a long wait though)

Germantown Commisary (ate here, but a long time ago...would recommend from what I remember)

I do travel to Memphis quite a bit and Germantown Commisary always wins out. I've had them all and the Rendesvous comes in second.  I do know that the Commisary gets all their pork from Iowa and since I am from Iowa...... I don't know what it is about them but some of the best ribs I've had. Dang good baked beans and the sauces are awesome also.
