looks excellent from the pics. Nice smoke ring, and the texture looks good.

It looks good to me and I would eat it with no hesitation.

What part of Alabama are you in?

Don't give up! That was a good first attempt. It took 4 cooks before I finally felt like I had my feet under me, and there still is, of course, all kinds of room for better results.

At least on your first attempt you were able to slice yours, unlike mine . . .   :-[

Don't feel to bad, the 1st time I cooked a brisket was at a BBQ Competition in 2003, there were 14 teams and my Brisket finished 16th!

I can't imagine cooking brisket in comp for the first time.  I didn't even invite my buddies over for this one!

Thanks for the tips everyone, MUCH appreciated! Expect to see "My Second Brisket" before too long.....good times!

Did your first brisket pass the ultimate test: Taste?

I'd give it a "solid".  I definitely feel like I have a good starting point for the next cook!

My first brisket I overcooked it because I did not trust my temperature sensor.

The second one I had a flame-out while I was asleep and it was a PITA to get it back smoking.  It was real cold that night and my smoke setting was to low.

The one I did last year was fantastic.  I am hoping the one I will be doing for Christmas this year will turn out as good.  I will be doing it on my new rotisserie.

I, among others I'm sure, am going to be very interested in seeing how this particular brisket fares! Please post pics and such!

Will you leave all fat on for the roto cook?

I don't know until I unwrap it to see how much fat is on it.
