I think the guys in California want Ribs and Tri-tip so that is probably what I am cooking!

Thanks, I can experiment as well when I get around to picking up a pork belly
I have done the pork belly burnt ends. I did them cubed up first but would do the whole belly next time. Rub with your favorite pork rub.  Cook it at 275 until 195 IT. Pull it off and cube . Put cubes in foil pan and toss in bbq sauce with additional rub, and honey. Put it back on cooker for 1 additional hour for sauce to caramelize.
