13# brisky point on the GMG
« on: January 25, 2018, 01:35:38 PM »

Picked this up last week at my local butcher/smoke shop.
Simple SPOG rub. Used the 18" expanding tube to add to the smoke profile. On at 4:30 AM,  Foiled at the stall, 164*.
Pulled at probe tender think it was 198*, at 3:30PM.  Into a cooler for a couple hours.   [ Invalid Attachment ]  [ Invalid Attachment ]  [ Invalid Attachment ]

Looks good, but is the whole thing a point?  That seems HUGE?

Probably 90% of the flat was removed.  I've seen some huge packer at his shop. Some pushing 25#.

Nice.  I love brisket point and wish I could find a place locally that sold just the point.
