Wings - First Time

Hi all..... I know this is a pretty basic topic, but it was the first time I have cooked my wings on the pellet grill, and exceeded my expectations.  What took me so long. 

I started with 5# of wings.  I lightly coated half the wings with EVOO and Weber Chili Lime Rub, and the other half with EVOO and a local all purpose BBQ rub I really like.  Let the wings marinate for about 1 hour while I prepared other dishes, and while the grill came to temp.

I cooked the wings at 180 with extreme smoke (I have a RT) for 30 minutes.  I then raised the temp to 350 leaving the wings in the pit while it came up to temp.  Once up to temp (about 10 minutes), I left the wings in the pit for 1 hour prior to pulling them off.  After looking at them, I decided they looked way to good to sauce, so actually served them without sauce, but with ranch and blue cheese dressing for anyone who wanted to dip.  I was really pleased on how they definite picked up the smoke flavor, and the skin was as crispy as can be.  Best wings I have made at home, not even close.  I also used my grill grates for the first time cooking burgers on the pit.  Outstanding as well.  Below are some pics of the wings, did not get any of the burgers.  Ate them too fast.

I know I was partial to the cook, but once again family loved them (wings and burgers), so as my best critics, I guess I dun good.  Thanks for all the inspiration.  Keep looking forward to more creative cooks in the future.

They look really good.  I've smoked a ton of wings on my RT.  I usually do 180 for 90 minutes and then 10-15 at 400 to get them crispy.

What pellets did you use?

Hey Ross. I will certainly be doing more Wings now for sure. I used Pit Boss Competition Blend pellets on this cook.
