ZCZ's flank roll attempt.
« on: February 09, 2018, 11:57:54 AM »

So this is my attempt at ZCZ's Flank steak roll, I hope I don't mess this up but I took the day off to try It.
I struggled trying to filet the rascal, badly enough that I had to break out the 2nd one at an attempt to redeem myself. Anyway I am not a butcher.
The only thing I changed, best I can tell is a splash of teriyaki and GPO in lieu of of steak seasoning, garlic pepper and onion. No salt due to soy and teriyaki.
It smells pretty good already.

They are so good!  Before I marinate a flank steak, I cross-hatch both sides, spaced about 3/8" and 1/16" deep. It gives more marination area.. I cook one side ,dip steak back into the marinate and back on to finish..(The contaminated marinate is sterilized by the heat).  Just something to think about for the next one.  :D

And here we go.
Wrapping the rascals with the rubber band style ties by myself was kind of like trying to get a convict to stay seated in the midst of a prison riot. Can not find our butcher twine? It's here but where? Anyway......

Yes, it is crazy good.
Thanks to ZCZ for the tilt.
Followed it to almost everything, added a splash of teriyaki and I did not do the steak seasoning. I did pepper, onion and garlic, all powders, did not measure. Not much though.
Here's the deal though, this morning my wife was still stirring in bed and I sliced it probably 1/4" , warmed it gently and medium fried a few eggs.
Oh mercy, made breakfast sandwiches on the same rolls.
Simply deelish. Promise you that.
FMT, it really does not dissapoint, it kind of looks dry but it was crazy good.
I will say that I won't add teriyaki next time though, we want to try it unadulterated.
Sliced for tomorrow's breakfast.
If you are like us, bones, strings etc. are good things.
The strings are clean.

Man, I haven't had flank steak since I was a kid, but this is how my folks would prepare it, crosshatches and all. John, you gave me a flash from the past!
