Good looking recipe. That’s also known as eastern North Carolina bbq sauce. It’s used exclusively for pulled/chopped bbq pork around here.
The Tony Chacheres is a good idea. I haven’t tried that twist yet.

Just tried the jj’s finishing sauce (google, easily found) on pork butts just finished.   

Umm yeah that’s some good stuff.

You have to like an acidic overtone to enjoy theses sauces and that profile in a sauce has never been to my liking!

Right this is the opposite of sugary bbq sauce.  I like it since it seems to cut the fat as opposed to laying on top of it.

I will put some Sweet Baby Ray's on the table for people that feel like BBQ needs sauce, but don't use it myself. In general if I go to a restaurant for BBQ I ask if they sauce their pulled pork and if they do I just assume it is bad and has been sitting in a restaurant version of a crockpot all day.
