DFW Costco's also carry the Swift brand, 3 Racks to a package normally running very close to 10#. More times than not, the Membrane is already pulled off.


I've been buying baby backs from Costco for years and I've never seen a membrane on the back. Its one of my favorite reasons to buy from them.

The ribs that I get at the Costco in my area always have the membrane on. Not a big deal to remove after you've done it a few times. I'm in Colorado.

Butts come 2 to a package. I've smoked many with great results. I don't know what company they come from.

I prefer to cook with the membrane on as it really seems to keep the meat moister. You can then give it a quick sear over some direct heat to burn off the membrane if you want.

This last weekend I did the three pack of Costco ribs and for the first time was seriously disappointed. Each rack had a significant percentage of cartilage that I have not experienced in the Costco ribs before - it seemed like no two ribs were the same, and  you could clearly see the joints between the cartilaginous tips and the bony parts of the rib. Many ribs had two cartilage bands at the end of the ribs.  I do not know where along the rib cage these were cut because I'm definitely no expert, but it is the first time I have had such poor quality ribs from Costco.

I'll definitely be checking the packs closely the next time for "normal" looking ribs (even though they are good at hiding the bad parts).

Our Costco's ribs are Swifts, three-to-a-pack, and I've never seen one with the membrane already removed.

I find that the Swift St Louis trimmed ribs from Costco vary in that some are trimmed properly and some are not.  No big deal.  Just feel where the rib bone ends, and trim them yourself either before or after the cook.  You can them cut up the cartilage pieces and serve them as "riblets". or discard as desired.  Another way to trim is to go to the 4th rib from the big end of the rack, find the end of the rib and cut off there parallel to the other side.  You will leave some cartilage on the shorter ribs, but no big deal.  It all eats good in the end.   :2cents:
