Reverse Sear Chicken Breast
« on: August 27, 2018, 09:28:08 PM »

Not quite ready for the recipe section.   A story to go with it, so here goes (thanks in advance for your patience)

My soon to be 15 year old daughter is into Kpop.  Google it.  It's a thing.  Korean boy bands.  It's not enough to know every fact about the 7 members of the band, she must also experience Korean food.  I've always been a fan of kalbi/Korean short ribs.   But had no experience otherwise.   So we discover bibimbap, Korean for mixed rice dish.  Rice, kimchi, veggies, protein, gochujang (red chili paste) an egg on top.  Fast forward a few months of eating out and we give it our own try.

Let's start with our first attempt at bibimpab.  Daddy vs daughter cook off!

I think mine was better, but she handled the egg much better than I did.

now back to the chicken.  We're talking foster farms, Costco chicken breast.   $2.99 a lb for 24 chicken breasts.   They do just fine in the freezer until needed.    We were attempting bulgogi and just used what we had at the house.

the marinade (I've been going two days)
  • one cup soy sauce
  • three heaping tablespoons brown sugar
  • three heaping tablespoons canola oil
  • one heaping tablespoon ginger powder
  • one white peach diced

Pretty simple stuff.  An hour or so at 180 to 225 on the smoker.  Under 5 mins each side on the gasser for the reverse sear treatment, then ... what just happened?  The best chicken breast ever!  This picture doesn't do it justice.

I'm a huge fan of this post.  I love the daddy/daughter element (I have 2 girls) and I love the dish.  They both look professional to me.  The chicken looks fantastic and I will definitely give it a try!

They both look good. One's taste would dictate preference. Nice pics.

When/if I ever go back to competing I may give this a try -- it looks delicious!
