At what temp do you cut burnt ends?

Shooting for 203 for finished temp on my brisket. At what temp do you guys cut your burnt ends? Thinking about cutting 1lb of 1" cubes. Then coating with BBQ sauce and put on smoker 5 minutes before we eat.

If you are just coating the cut pieces and setting the sauce, I would do it when you consider the brisket cooked to the feel you like.
