Weekend Cook
« on: October 21, 2018, 09:41:08 PM »

I went off the board this weekend and tried something a little different.  I cooked a 19# sirloin butt.  Man did that thing come out tasty.  It wasn't exactly cheap, but I'll be doing that again in the future.

Pics?

Unfortunately no.  By the time I thought of pics, I already had eaten, had it cut up, and the remainder in the fridge.  Then I was DOH!!

I have been there. Sounds like it was a success.

Curious on how you cooked it and how you served it? We really like sirloin, but never thought about cooking a whole butt. Always done just steaks or a sirloin roast (which end up being like a large steak IMO).

I was on a bit of a tight schedule this weekend,so I split it in two so it would cook quicker.  I cooked it at 230 for till it hit 140 (about 6 hours) and then pulled and rested it for a couple of hours.  Then I sliced it fairly thin with a knife.  I always liked a good tri tip, but I thought this was better.  I'll be picking up some good coleslaw on the way home to try it as a sandwich.

This whole thing was kind of an expensive experiment.  I was curious what a really good cut of meat would be like on the smoker.  I'm a fan.  Definitely a bit pricey to do very often, but I will be doing it again.
