Egg Salad

Hi all,

I know this is not pellet related, and not sure where to put this ask, so Bent or Kristin feel free to move or delete. I have a few hard boiled eggs I would like to make into a sandwich for lunch tomorrow. I have the usual mayo, mustard, onion ... anything different out there worth trying. Thought I would reach out to the most creative group I know. Eggs are already done, might be able to sneak in a few extras tomorrow. This is nothing fancy, just for me and possibly my wife for lunch.

I always like to add a teaspoon or two of a sweet curry spice. Gives it a nice change from the typical egg salad sandwich.

I add a little bit of sweet pickle relish, no onion (I think they might clash in flavor).  But then I like a bit of sweetness in a lot of things.

I like to add chipoltle or cayenne, even hot sauce. Smoked eggs make good egg salad also.

good responses all around.

My fav is sweet relish, a lot of it.

If sweet relish is not your thing, then diced celery for some crunch and a dusting of smoked paprika.

I'd save the onion for tuna salad.

Thanks all.  I liked Gringo's idea of adding a little curry for a different flavor profile.  I am not big on relish, but liked several ideas of adding celery for crunch.  Since I did not have celery I added some shredded carrots for color and crunch.  In the end I used mayo, Dijon mustard, curry powder, shredded carrots, green onion, field greens, salt and pepper.  Sorry, nothing with the pit (although I am going to try smoking eggs as suggested), but a good sandwich.

Next time you make eggs, peel then and put them in the pit on low for about 2 hours.  Then make your egg salad!
