Play by play. How are the Thanksgiving cooks going?

30 lbs of Turkey legs for 3.5 hours at 240 degrees.

Here is the finished turkey.  I did it early due to this is one of three turkeys for our HOA Thanksgiving dinner.  The other two were done in ovens.  The initial response from some of the ladies in the kitchen is they did not want to carve it, but wanted it as the centerpiece.

I did a dry brine that set 36 hours in the frig.  I wanted to do it longer, but the turkey was not defrosted soon enough.  I did the boiling water trick, but I forgot to spray it with Pam.  As it was being carved the skin peeled off. It was very moist and it was not to salty.

I just put mine on, but as usual, Murphey’s law prevailed. After replacing the auger motor last night and verifying that everything was working, I started the pit for the turkey this morning and went inside to prep the turkey. When I went out to check on the grill, it was stone cold, the fan was not running and the bottom of the pit was full of pellets. I looked under the hopper to check the fan and tried to turn it by hand to see if it was frozen and low-and-behold it started running. Not to look a gift horse in the mouth, I buttoned things up and am back in business. I see a new fan motor in my future.   :-[

I had a similar quandary last year over Thanksgiving. With a little bit of perseverance I was good to go for Christmas. Glad to hear you were able to get back up and running.

This is a 13.5 lb. fresh butterball, dry brined for 24 hours, injected with homemade butter concoction  and cooked on the Traeger at 335°. Best turkey that I've ever done. One take away, it cooked way faster than anticipated. The thickest part of the breast reached 156° in slightly less than 2 1/2 hours.

I was expecting to see..."mixed in the stuffing"...after this and I thought man, that sounds really good!


About a cup and a half of mixed herbs fine chopped, about a quarter pound of prosciutto fine chopped, the paste of one garlic bulb roasted in olive oil...
