So... in a couple of my posts i was talking about how much i am loving my RecTec and my wife decided to limit her meat intake.  She isn't a vegan, but she doesn't seem to be all that excited for much of what i am cooking.  For Christmas i am doing a Prime Rib Roast.  I think i have the approach figured out how to make that good.  But, since it is Christmas and I want to be a good husband... any suggestions on smoking Tofu? 

I googled it and found very little.  My Rib Roast will be on for 3-4 hours.  So, i am thinking about putting in the smoker box for that same amount of time?  Any suggestions out there?

I think it is better grilled, but you could smoke it...  My suggestion is don't use the Silken or Regular if you plan on smoking,they are usually the most popular due to texture, but they have the most moisture content and I think that might inhibit smoke adhering to it.

But that is also very loose conjecture...

It might be an interesting experiment, but I expect it will just taste like wet smoke. Try it, but have an extra pack ready to grill, roast or saute, just in case.

Tofu doesn’t really taste so it takes on any flavours you put on it. I’ve got vegetarians/vegans in my family so this is what I’ve made alongside smoked meatballs:

- Use firm tofu
- Drain, press, & pat out as much moisture as possible
- Cut to small cubes (15mm or 3/4”)
- Cover in your favourite rub
- Smoke on a tray at around 250F until outside forms a crunchy shell and bulges a bit.  You can turn them if the side touching the tray cooks them faster or slower than the other sides.
- Baste with bbq sauce and cook until it sets as glaze.

You can serve them with toothpicks and a dipping bbq sauce or as “protein” croutons in a salad.

Of course, if they aren’t vegan, grilled haloumi is a guaranteed vegetarian crowd-pleaser.

Thanks for the replies... and the recommendations.  I will use them in the future as the Misses claims to be liking this new fad.  The prime rib i made took too long but was dynamite!  The tofu... not so much. 

I think you nailed it.  I will either need to grill it or follow tewharaunz's recommendations.  I tried smoke and rub.  It was ok.  (I was told).  I used extra firm and didn't press it.  The rub didn't seem to penetrate the tofu and it really didn't pick up much smoke flavor.  (probably because of the moisture even though the wrapper said Pre-pressed). 

I will keep working on it.  Not the thing i am most excited about smoking but....

as a joke,

I made some TOFU Burnt Ends while doing some other BBQing,
they turned out surprisingly well,
I'd never choose them over a meat counterpart,   but as an option,  it wasnt bad

we got the extra firm TOFU
drained it,   cubed it  1.25-1.5" cubes
placed on a drying rack for an hour or so to get the liquid out
coated in olive oil
then sprinkled with a basic BBQ RIB RUB on all sides
put on the grill on a rack while smoking the other food for about an hour or two to help dry them out
then tossed in bbq sauce and put back on the grill to glaze the sauce

everyone was surprised that they werent bad at all



good luck

I realize your wife isnt going vegan
but if you want to serve this to someone with restrictions on their diet,
make sure the BBQ sauce is Vegan as well
