Sizing up the right weight of a Brisket

Have a buddy that wants me to cook a brisket for him for 8 people. Am I close on this.

-   1/3rd - 1/2 pound avg amount per person

-   Normal trimming of fat and tallow of brisket around 2 - 2.5 lbs (Probably more dependent on size of brisket)

-   Weight lose during cooking is around 35%

If I do the math right I should need around (if I figure .5 lbs per person) 4 lbs finished if I lose 35% during the cook (4 /65%) I should put around a 6.15 lb one on the grill. If I trim 2 lbs off prior to the cook, I would need to get around a 8-9 lb brisket. 

I am close on my figuring?

That is what I would do.  If you have other meats and lots of sides and it is served versus self serve, you may have extra which can always be frozen.

Gonna be a tough cook to have done on Sunday afternoon.  4"-7" of snow, 30 mph winds out of the NW, -9 for a low Saturday night,  and I can't imagine the how low the windchill will be.  May have to set up a wind block.

Or cook in advance and reheat...i don't care what grill anyone has those conditions will be challenging...best of luck to you

13 degrees Saturday morning with chicken breasts and wings on the smoker. Started the first brisket at midnight it was 5 out.  Started the other smaller ones at 5 this morning it was 3 out. DB holding steady at 250 right now. Put up a folding table side ways to help hold the wind back. Local weather says it feels like -15 out. Keep the smoke rolling!

To me, wind is the mega-killer when cooking in the wintertime.

Typical 50/50 salt pepper rub. I will never change what I put on a brisket.  Wings I marinated overnight in hot sauce then salt, pepper and a light coating of BBQ rub.  Chicken breast just salt pepper and BBQ rub.  Did the wings and breasts on Saturday. Brisket went on at midnight and the smaller briskets went on at 5 am.  Pulled the smaller of the 3 at 1 pm right around 200 degrees. The 8 lb I pulled at 2 pm at 192 temp and the 12 lb (on top rack) I pulled at 1:30 at 195 temp. All three I turned fat side down half way through.  Looks like this is going to be a once a month deal. Friends want me to do a BBQ night. May need to get another smoker!

Thanks for the compliments. The people I did this for also had the same sentiments. I was suprised be the pellet usage as I ddidn't even use a full hopper on the briskets as the smoker was on for around 15 hours.
