My son is off at school, so it's just me. Instead of doing the whole turkey thing, I got a turkey 'loaf'. I think I've had it long ago and it was pretty tasty.
Off I go to Safeway, and picked one up. They were all 3 lb'ers so I just grabbed one. They weren't priced, but were in the turkey section, so I figured they'd be reasonable. HARDLY! I got home and the receipt said 15 bucks. $15 for white and dark scraps meat glued together? Lesson learned the hard way...
So now I have 3 lbs of scrap that I don't think I can get 3 meals out of. What else can I do to use up some space in the Jr.? I'm thinking of a corn and green bean casserole. I'll just wing it.
After looking in the pantry, it hit me. I wonder if I could take a can of corned beef hash, squeeze it outta the can, and smoke it?
For a buck 50, I'll try most anything.
It should be interesting at the least. If it falls apart, I can still fry it and use the gravy the loaf came with.
