LEM Big Bite 30lb. Motorized Sausage Stuffer.
« on: November 16, 2024, 02:09:15 PM »

Pros:
Large Capacity.
Motorized.
Foot Control.
Variable Speed.
All Stainless Steel, easy cleaning.
Multiple Sized Piping Tubes.

Cons:
Larger Size: Storage space.
More work to pipe smaller loads.
More to go wrong?

A Beautiful piece of equipment for anyone.  Best suited for the person/group that makes larger batches of sausage.  It sets up easy and cleans easy, but needs a lot of room to do both.  The variable speed control is nice feature for large jobs.  Multiple sized piping tubes makes any job easy.  From breakfast sausage to Summer Sausage, to chub's of Ground Beef!

Makes piping of any meat much easier for the person that has to work solo.  Foot peddle has more then enough cord to fit any situation.

Those looked to pipe really smoothly in the video.

Very nice stuffer.

Is there a write up on the making of the sticks and such. I am  not sure I ever had any that piped so smooth. Also no matter the collagen casing I use they will peel off for some reason, your does not look like they will do that, unless they separate a day or so later.

This particular recipe called for the salt, cure & phosphate to be mixed for 3 minutes, that I did with egg beater.  Then I work the meat into a paste in batches in the food processor with the wand attachment, adding the spice slurry as I went.  It ends up being a paste almost like what Bologna would be like.

Pretty much just like this...

As far as the LEM casings, they are not coming off.  Wish they would fall off.  Really not necessary, but without a jerky gun, way to much work for a guy like me to solo the skinless links.
