I smoked, SV'd (48 hrs. @ 135°), froze, heated in the SV (130°), seared (W/torch) then weighed. Flat + liquid in bag =21.4 oz. Liquid in bag = 4.3 oz.  Flat = 17.1 oz. Yes, about 20% weight loss.
