So the flat of the brisket seems to be over done. Perhaps a bit more than the last one I did. I am thinking that I may need to separate the point from the flat so I can take them off at different times.

When did you decide to pull it? Where you looking for a specific IT, or just probing for tenderness?

I often separate, but only because I usually make burnt ends with the point.

Were you able to get the photos to load? As often happens I had one this morning sideways, fixed by Bentley and Okie Smokie.
I don't have trouble other than that, would love to see the finished product.
