Memorial Day Cook

Pork spare ribs:
Seasoned with BBQ rub made by Meat Church.  Finished with Craig's BBQ Sauce.  Smoked at 225 degrees for approximately 4 hours.  100% pecan pellets.

Beef short ribs:
Seasoned with kosher salt and course ground black pepper.  Finished with a glazing of Swamp Boys Original BBQ Sauce (and some for the cutting board).  Smoked at 225 degrees for 5 hours.  Then wrapped in butcher paper and cooked another 2.5 hours at 275.  100% pecan pellets.

Restaurant Depot near me sells them in vac sealed packs of 4 racks.  I have 3 more of those racks in the freezer.  Full packages of 4 racks range from approximately 18-20 lbs.  $4 per lb.

I'd say this particular rack was about 5 lbs.  Each rack is 4 bones.

I gotta say, those beef ribs look fantastic.  But as much as I was a proponent of learning new sauces, I don't think I would ever sauce beef ribs ?!?

Necessary? Just a test? Your favorite sauce?

I’m just a big fan of sauce and really like that one in particular (Swamp Boys).  I like sauce with brisket too.
