Chicken Kabobs

My wife found this recipe online so thought we would try it.

1 lb of chicken breast cut up into kabob size pieces.

Marinade:
1/4 cup olive oil
1/3 cup soy sauce
1/4 cup honey
1 teaspoon minced garlic
Salt & pepper to taste

1 red bell pepper cut into 1” pcs.
1 yellow bell pepper cut into 1” pcs.
2 small Zucchini cut into slices
1 red onion cut into 1” pcs.

Marinade the chicken and veggies for 2 hours at least. Can go as long as 8 hrs.   I marinated the meat for 4 and the veggies for 2.

On the skewers and ready to go. I have metal skewers and a special kabob rack I made when I worked for Memphis grills. Be sure to soak wood ones if you use those.

I grilled them st 500 on my Memphis Pro for 5 minutes per side.

The flavor was fantastic!  Will definitely do these again. Mix and match with other items of your choosing.

I think kabobs are kinda' fun.  (It doesn't take much to entertain me.)

Beautifully done!  I am thinking of doing some Tenderloin Kabobs over the charcoal to get rid of it this weekend!
