Do you grind meat once or twice

When grinding brisket or pork butts is it best to run it through one time or 2

I have not done it yet, but from what I have read I think it depends on what you are using it for after it is ground.  Most places suggest only once for hamburger.

Yes it really depends on your preference. I made some sausage and did a double grind and to me it was too fine.

What ya gonna use it for?  I am supposed to triple grind this beef for my all beef hot dogs, that aint gonna happen with a Kitchen aid grinder.  I am gonna have to twice grind it and that is going to be bad enough.

Never made hot dogs, but from what I have seen aren't they more of an emulsification/slurry consistency? You could grind it once then into a food processor to finish.

Supposed to have a large grind, then a couple of very small, like 1/4 grinds.  This is before the mixing and emulsification takes place.  I usually know better then anyone else, but I am going to try and follow what the experts tell me this time.  If I had a real grinder like you are looking at it would be a breeze, with the Kitchen Aid, well I think you have experience with them.  I think I am going to do the course grind right into the stuffer, the try and put the largest piping spout on and just pipe it right into the Kitchen aid.  Mixing will not be an issue, emulsifying it in the food processor, that is going to be the step that is lacking, but I am going to go slow and give it a good effort.  I bout meat gel which will help with water retention and protein extraction so we get it real sticky.  No way I get it to a commercial blend, but after seeing FMT's How To, I think it will work!

Twice first the coarse the one more with the middle size. Only used the smallest size we have once and it was to fine

1 time for us but we only have a kitchen-aid also and as noted, they are fairly limited in their abilities in my opinion.

I agree with yorkdude on 1 grind for those, but for GB I do use the small plate, I like a fine grind for that!

My grinder came with 4 and 10mm grinding plates, I normally only grind once with the 10mm plate. I once tried grinding chuck with the 10mm and then the 4mm but I did not like the finished consistency.
