I enjoy having a large, older model grill. It has two hoppers and predates hot rods. As a result, starting it up requires manually lighting the pellets. The controller only has three settings, so cooking temps are an inexact science! I normally try to cook a lot at one time to maximize my efforts. The results have normally been quite good and for some irrational reason I get to feel like I have taken the moral high ground!

However, as much as I like my grill, I must admit every once in a while there have been nagging questions that keep popping up in the back of my mind. I have wondered what it would be like to simply push a button and have the pellets magically light; to have a wide range of temperatures to choose from; to be able to sear and smoke meat on the same grill; and not having to roll out a tank each time I want to cook.

Looks like I will soon be able to find some answers to my questions. I found a one year old Pit Boss 700 classic for sale online in my area. The price was quite reasonable, so in a moment of weakness I caved and picked it up. I am hoping what I loose in moral high ground will result in being able to grill more often with less hassle. I think the two grills will complement each other quite well.

Here are a couple of pics of the new one. Not sure why the previous picture of the chicken is upside down, but it does make it look more impressive.

I enjoyed talking with the guy I bought the grill from. We spent a fair amount of time talking about various recipes and sharing grilling tips. He used it quite a bit over the summer. Said he had medical bills and could use the money now, plans on getting another in the spring. I will be on the lookout for a new member from Bronson, MI! That's a BIG bad  old Traeger! My first Traeger from back in the 90s had the old 3 position controller but did have hot rod.

21 whole chickens at one time, I would say that is a lot.  Thanks for sharing the pics and looking forward to seeing good cooks coming from that Pit Boss.

Fired up the Pit Boss for the first time tonight. It almost seemed like it was cheating by just pushing a button to get things started. I thought I would start by grilling something, since that is a whole new world for me on a pellet grill. The other grill tends to top off around 375.

I grilled swordfish marinated in evoo with basil and farm dust (a concoction of herbs that is a salt substitute). Served it on riced cauliflower with picante sauce and grilled peppers. Turned out ok but there is a learning curve. I guess I am more of a low and slow guy!

I am currently smoking some salmon, so we'll see how that turns out.
