little filler crab cakes and flank steak

a fun little meal for Sunday night supper
It's early for commercial dungeness season, but friends and family are getting recreational crab ... we're totally spoiled.

for reference my first attempt at this crab cake recipe two weeks ago.   Much better yesterday with the lumps in tact.

Boy Howdy does that ever look good.
Dungeness is BY far the best crab meat there is in my opinion.

Crabcakes one of my favorites and they look very very good.  What is your recipe I make mine basically following the Baltimore version.

I meant to follow up with this thread.

Google "Maryland Crab Cakes Recipe (Little Filler)"

Two points really sold me on this recipe.

1.  They are baked and not fried so no mess.
2.  Little filler, I want to taste the crab not the crackers, potatoes, panko filler/binding agent.

I've made these three times now, and everything can be adjusted to taste, maintaining as much of the lump crab really helps too.

IMO the hot crab cakes any day.  I also love leftover crab cakes, Assuming I am lucky enough to have any leftover, as they go great with eggs especially poached.  I have made Chesapeake Benedict, which is a crab cake topped with a poach egg and served on English muffin

I am a cold crab eater.  A crab salad sandwich, with mayo, celery and a little Old Bay.

During my yearly venture to the NW I catch a plethora of Dungeness crabs and as you can imagine, prepared them in multiple ways. IMHO, once cooked, any time you reheat the crab meat, it takes away from its wonderful flavor. My favorite way to eat crab is the same way I eat lobster, a little salt/pepper and dipped in clarified butter. Salads or a little cocktail sauce are also very good.  :2cents:

Dungeness crab is a luxury item.  I happen to be spoiled.    While cold with Cajun garlic butter is my favorite, crab stuffing, crab stuffed mushrooms, seafood boil, crab cakes recently are all good eating.  I have the luxury of living in an area where I can do them all.  and before ya'll make fun, yes sometimes I do get tired of just the cold crab and butter.
