My first try at Beef Sausage. It came out very well. I cooked them at 250 for about 60 mins or so. I used collegen casing instead of hog casings this time. The last time I did brats the hog casing came out a little chewy.

I did 70% lean brisket and 30% brisket fat
I used the following spices:
- 6 pounds meat/fat
- 3 tbsp coarse salt
- 3 tbsp coarse pepper
- 1 1/2 tbsp paprika
- 1/2 tbsp cayenne
- 1 cup cold water

I used 30 mm collagen casing. I must say I loved the taste. If anything I would pull them off the smoker a tad bit earlier.
