What are you cooking for Christmas Dinner?

Show us what you are cooking for Christmas dinner.

Doing a 9+ lb. spiral cut ham here.  375 for two hours on the Pro. Hoping for a little smoke flavor. Will glaze it for the last 30 minutes.  Had to truss it up a bit to hold it together.

We’re doing a bone in Turkey breast and a small ham with Stove Top Stuffing and maybe some hassleback potatoes in the air fryer.

 A custom 5 LB turkey roast. Smoked then cooked @ 350º 'till done and small baked potatoes.

SRF Cowboy steaks smoked with mesquite then seared with a cream garlic sauce on the side, potatoes gratin, green beans with shallot caper butter, chocolate French silk pie.

Second dinner on Saturday

Bacon wrapped pork loin.  Dry rub of brown sugar & kosher salt overnight.

Just the wife and I today so I kept it simple(besides it's raining ;)), Beef Tenderloin with de Burgo sauce, left over Duchess Potatoes and a green salad.

Heading down to my mom's house for dinner.  I do not have any pics, she picked up 15 rib eye steaks which I will be firing up on her gasser.  She wanted to change up from the rib roast and went to steaks instead.

6.5# Certified Angus Tenderloin in the oven. Sides are scalloped potatoes and spinach sautéed with garlic and finished with lemon juice. Pecan pie for dessert.

The ham and all the sides were good. Cheesy mashed potatoes with chives, corn casserole, cole slaw, red grape and cream cheese salad, peas with slivered almonds & bacon. Apple pie & ice cream for dessert.

Thought I would I would post what dinner looked like. Beef was fork tender and one of the best tasting tenderloins. Made a horseradish sauce from some fresh grated horseradish that was a delicious accompaniment to the beef. Finally got enough horseradish in it to taste it.

All in all a blessed Christmas.

Hope my fellow Pellet Fans had the same.

Not sure my photo will show, SmugMug changed the options on me.

Kept it simple..

Combined with mashed taters and home made dinner rolls..
along with the pickle and cheese tray...

Rib roast, dungeness crab, Brussels sprouts, Hollandaise sause, doctored up horseradish (prepared horseradish, sour cream, Montreal seasoning, shallots).  First shot is my plate, been rather consistent for the past 5 plus years.

Second shot is my youngest daughters plate (flute is Martinellis sparkling cider).   She's always been a picky eater (never eats anything aside from bacon off the pit.)   Some Christmas dinners even saw her eating chicken nuggets.  As contradictory as this might sound, she's a fan of Vietnamese soup Pho.  So we spent 6 hours yesterday making our own.    It was quite the production, went to the asian market in town to get all the ingredients, the secret being the Cot Pho Bo soup base.    We boiled beef neck bones, added a thin rib eye steak we had in the freezer.   heated up ginger, seared star anise and cinnamon, used the spice packet along with the soup base.   Had the butcher slide a chuck roast on the second thinnest setting (worked perfectly!)  Boiled the noodles for 5 mins, added the mint, basil, and bean sprouts.  Add hoisin and sriracha to taste.   Picture doesn't really do it justice, and it was a little too salty (need to watch my portions on the soup base), but we were all very happy with our first attempt at Pho.  Also made for a great family activity after opening presents.

I Love Phở...Was a nice little hole in the wall in both Pasadena and Las Vegas that did a nice job of it!
