Mayo for glue
« on: July 17, 2020, 01:05:55 PM »

I've been using mayo for glue on my ribs lately and I really like it. Keep them really moist with no mopping or spritzing. anybody else been doing this?

Do you find it adds any kind of flavour?

I have never used as a binder. However i have BBQ'd chicken coated with white sauce a la Big Bob Gibson.

No not really.  But it keeps the rub on and the bark moist!

I rarely use a binder, but I tried Franks Hot Sauce because you know I put that _ _ _ _ on everything. Didn't do much for flavor, then I though lets try sriracha and I could taste the difference, even the GF did, she  was not a fan. I tried homemade Habaero mustard on a butt one time it was great on the outside no flavor past the bark, I should try i on ribs.

I finally got around to tasting the Tabasco Sriracha and loved it.  I think it would be a great wing sauce.  It was not as thick as the rooster label sriracha.
