Smoked Prime Rib

I smoked a 5.5lb bone in rib roast today.

Covered in dijon mustard and rubbed with Costco Prime Rib dry rub.  I also added some thyme and garlic powder for good measure.

Took about four hours at 235F.  I pulled it at 126 and it came up to 134 after resting.  This is the 2nd I've done and I'm always surprised at how much smoke it picks up.  Not overwhelming but it's noticeable.  Quite tasty.

I'm with you. The first time I tried one on my smoker I wasn't expecting much. I thought how much smoke can get in there on this big ol chunk of beef? I was very pleasantly surprised.

I let it rest about 15 minutes. And used a butter knife to cut it... :P

Hmmmmm.... looks great Ross.  One of my favorite cooks (and I have done it a few times) has been prime rib.  Both with bone and without.  Smoke flavor was awesome.  Let us know if you need help with your left overs...... assuming you have them.  Hahaha.

Nice Job Ross and zeph.  Outstanding looking eats.  One of my favorite cut of meat on the smoker.  Might need to get one on this weekend.
