I Found this recipe tonight.  I haven't tried it so you'll have to be judge.

1 pound lean ground beef (90% lean)
1 cup beef stock
2 tablespoons tomato paste
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper

In a Dutch oven, cook beef 8-10 minutes or until no longer pink, breaking into crumbles. Stir in remaining ingredients; bring to a boil.  Reduce heat , and cook, uncovered, 20-25 minutes or until thickened, stirring occasionally.

So this is a hot dog chili, Wienerschnitzel, Cincinnati, or just plane chili recipe?

Definitely not from Cincinnati.  No Cinnamon in it.

I have to admit, I haven't had Cincinnati chili, but just from thinking about it I have to agree with Bentley. 

No Cinnamon in chili for me.

Perhaps if I grew up on it,I would feel differently.

I bought some breakfast sausages at a local butcher shop highly recommended by one of the guys behind the counter.  Had apple and cinnamon in them.  Like some said, rather "off putting".  Pretty sure it was the cinnamon.  And I like cinnamon, but I guess not in sausage. Just stick with their regular links.

Alot of Mexican recipes have just a pinch of cinnamon. It does make a difference, and to me, in a good way. I think if there is a pinch in chili sauce, it's good. Much more than that, and I'm out.

FMT,

That might be the answer. Enough to slightly shift the flavor profile, but not enough to directly taste the cinnamon.

For awhile back right after the turn of the century, many of the competition BBQ teams were adding a pinch of Allspice to there rubs and sauces, never got it!  Someone hear's something and the lemmings run right off that cliff!

I used to put cinnamon and cardamom in my rubs back in the day too.
