Pepper Stout Beef for Breakfast

Last weekend my brother and his family came up to visit. My sister-in-law is kind of a foodie and seemed adequately impressed, which doesn't always happen. At one point she remarked she could eat one of the sandwiches for breakfast. We had quite a few leftover, so that got me to thinking. I realized that most everything needed for an egg bake was already there; bread, meat, onions, peppers, and cheese. So that evening I opened up the sub sandwiches in a cassarole pan and poured in an egg milk mixture and added some more cheese (provalone and co-jack). Let it soak in over night and it made a hearty egg bake for breakfast in the morning.

I am sure the pepper stout egg bake is nothing new to many on this page, I know there have been some creative posts on how to use up leftovers. However, this was a novel idea for me!
